Here are some of the basic ways to brew tasty tea.
Find your favourite balance of fragrance, colour and taste and enjoy!

- Prepare tea leaves of good quality.
- Warm the teapot and tea cups.
- Measure tea leaves with tea spoons.
(For 350-400ml = 2-3 cups per person):
Big tea leaves: a heaped spoonful (3-4g)
Small tea leaves: a light spoonful (2.5-3g) - Bring water to a boil of 100C.
Boil tap water at a high flame until it bubbles. - Put tea leaves in the pre-heated teapot and pour in hot water.
Let the leaves steep well:
Big tea leaves: 5mins.
Small tea leaves: 2.5-3mins. - Stir the content with spoon once or twice, and pour the liquid to cups using a strainer or infuser.
* Steeping a small amount of tea leaves thoroughly is the trick to serve tasty Loose-leaf tea.
* The steeping time of tea leaves above are only a standard. Adjust to your taste.

- Pre-heat tea cups.
- Pour hot water in cups with tea bags, and leave it still.
- Use saucers as lids and let them steep for 2-3mins.
- Pull out tea bags when sufficiently extracted.

- Prepare for a tea bag per glass.
- Prepare for boiling water: only half the amount of water to make Hot tea is needed.
- Let liquid steep for 2mins: Ice tea is apt to cloud so do not leave it for too long.
- Pour content in glass filled with ice. Cooling the liquid radically prevents the Ice tea to loose its quality.

It is recommended to use Ceylon, Assam or Kenya CTC tea leaves.
- Put water (140ml per person) and tea leaves (about 5g) in a pan and bring to a boil.
- Add milk. Boil liquid until the tea is extracted well and add sugar to your taste.
- It is ready when tea leaves are gathered to the centre and the liquid is brought up to the boil.
- Pour content in cups using a strainer.
Flavour of tea is volatile and delicate, so the taste may change depending on the climate and humidity of the environment. It is not advisable to make more than you could drink within 2-3 weeks.
We strongly recommend preserving the rest in an airtight container and be consumed within a reasonable time.
